Cool Creamy Slaw


Perfect topping for Pulled Pork Barbecue (vegan) or Lentil Tacos


1 package tri-color slaw mix

1 small cucumber, chopped

3 green onions, chopped 

2 T Vegenaise

1/4 cup rice vinegar

1 1/2 teaspoon dried dill

1 t salt

1/2 t pepper

two packets stevia


Toss slaw mix, cucumber and onion together in a large bowl. 


Whisk the remaining ingredients together in a separate bowl. Pour over the slaw mix and toss to coat. Serve immediately. 


Note: This does not store well so only put dressing on the amount you intend to eat fresh. The slaw mix will keep separately from the dressing one day. It will keep longer without the cucumbers.
