Creamy Buckwheat Cereal
This can be any brand. Just look for "Cream of Buckwheat" or "Creamy Buckwheat" cereal. Check the ingredients for 100% Buckwheat or Buckwheat groats.
Buckwheat is not wheat at all. It is a different plant entirely. So don't worry, no gluten here! It IS however, a complete protein! That means it has all the essential amino acids and is very hearty and satisfying.
My friend Sue introduced it to me last weekend. We ate it for breakfast with blueberries and stevia. The minute I tasted it I thought it would be great as a savory dish like garlic-cheese grits. The next day we added garlic salt, Earth Balance buttery spread, a Diaya Cheddar Shreds. YUM!
The great news is that 1/8 cup dried cereal cooked according to the package directions yields the same amount as a 1/4 cup of oatmeal. For around 70 calories you get 2g protein, 2g fiber and significant minerals and vitamins.
Make this cereal according to package directions but substitute almond milk for half the water to make it creamier. Then decide whether you want sweet or savory toppings.
Also, use this cereal to add a creamy consistency to smoothies while boosting the protein, fiber, vitamin, and mineral content! Start by adding a tablespoon at a time, see how it tastes and add more or less next time.
