Gluten Free Vegan Brownies
2 cups Brown Rice Flour
½ cup quinoa flour
2/3 cup coconut sugar
2 t baking powder
1/3 cup cocoa powder
2 Ener G egg replacer eggs
1 cup apple sauce
1/3 cup coconut oil
1 t vanilla
pinch salt
2/3 cup chopped walnuts
1/3 cup +/- mini vegan dark chocolate chips
In a large bowl, mix first 5 ingredients. In a small bowl, prepare egg replacer. Add to dry ingredients. Add in all other ingredients except nuts and chips. Mix thoroughly. Add nuts and incorporate. Spread batter into a parchment-lined 8x8 baking pan. Sprinkle with chocolate chips. Bake at 325 for 35-40 minutes.
