Italian Calzones or Mexican Quesadillas
It's a Two-fer! By just swapping out a few spices and your choice of beans this recipe can be Italian or Mexican!
Roast a pan of veggies like:
Zucchini
Yellow squash
Onions
Peppers
Mushrooms
Garlic
Season the veggies with Italian seasoning for the calzones or Mexican seasonings for the quesadillas.
Place a rice tortilla in a large skillet.
Spread with hummus for the calzone or canned refried beans for the quesadilla.
Add roasted veggies to one half and fold over.
For the quesadilla, toast both sides till crispy. Garnish with avocado, salsa, and vegan ranch.
For the calzone, pour marinara over top, sprinkle with vegan cheese, and bake till heated through.
