Kale and Apple Salad with Peanut Vinaigrette


This is my favorite fall salad! Simple to make if you buy prepackaged kale slaw and Trader Joe's Peanut Vinaigrette! If you make the dressing yourself you can use it on rice noodles with stir fry veggies too! 


Ingredients


Dressing:

1/4 cup Peanut Butter

1 T apple cider vinegar

2 T lemon juice

1 T Soy, Tamari or coconut aminos

1 T toasted sesame oil

3 T honey or maple syrup

1-2 garlic cloves minced

1 t minced ginger (optional)

1/4 t sea salt

1/4 t crushed red pepper flakes

water for thinning


Salad:

4 Cups chopped, fresh kale

1 Cup, shredded cabbage

1 carrot, shredded

1 avocado, chopped

1 Honey Crisp or your favorite apple, chopped

Dry roasted peanuts, garnish


1. Whisk dressing ingredients together. 


2. Assemble salad ingredients. 


3. Drizzle salad ingredients with desired amount of dressing and toss to coat. Garnish with dry roasted peanuts. 


Notes: To make ahead of time, leave the apple,  avocado and dressing off the greens until ready to serve. I like this salad leftover the next day but the apples and avocado can get a little brown and mushy.
