Labor Day means the end of summer in most places in the U.S. but in the deep south it's still HOT! It will be another month before I break out the soup pot but until then, there are plenty of good recipes to enjoy the flavors of fall. When the fall decorations start to appear I begin to crave all things pumpkin. This year, my pumpkin cravings have peanuts with them. I can also go for an apple everyday. Here's what's cookin' at our house...

Kale and Apple salad with Peanut Vinaigrette
If you have Trader Joe's near you, just buy their dressing from the produce department. I also buy their kale slaw mix and add a chopped apple. This salad travels well too. Make it for dinner and take the leftovers for lunch the next day.
